Vegan Recipe Gold!

A few nights ago I was running out of ideas for dinner so I turned to my friends via Facebook for recipe ideas. Heather and I went back and forth. She suggested recipe after recipe because a lot of the dishes she suggested I already cooked. This went on for 38 comments until she struck vegan recipe gold!  She suggested a Greek Spaghetti Squash recipe. The recipe she suggested was vegetarian because of the feta cheese so I omitted it and put my own spin on it. I added basil to the tomato sauce and capers. I love the salty taste of capers.

  I've made spaghetti squash one before so I knew Keithon would love it. Last time I only picked up 2 small squash and Keithon and I almost killed each other or the leftovers, so this time I grabbed 1 large squash maybe a little too big, it came in at a whooping 3 pounds! ( We still have leftovers) I season it lightly with salt and pepper before putting it in the oven.


 While the squash was in the oven I set my sights on the sauce. I love the bright colors of tomatoes and basil.
Once the squash is cooled. I "spaghettied" it by pulling it from the shell with a fork. It is amazing that a vegetable can come off in strands.
 After all the squash was off the shell I made a well in middle and poured the sauce, capers and olives and mixed them well. I had to make the well because I had more squash than I made sauce for and I wanted to make sure it was mixed well.

 Needless to say this dish went over well and Keithon went in for seconds. He may have gone back for thirds there was so much left I couldn't tell. This is also a dish I feel good about giving my child because it is a whole food. We don't eat a lot of mock meats but sadly we do carb load and that's my fault, so I love when I can make a meal where you don't miss the starches.

Greek Spaghetti Squash



  • 1 spaghetti Squash

  • 1 onion, diced small

  • 1 clove garlic, minced

  • 2 Tbsp. olive oil

  • 2-3 tomatoes, diced

  • 2 Tbsp chopped  basil

  • 1/2 cup chopped black olives, sliced

  • parsley, for serving

  • 1 Tbsp chopped capers  


  • Directions
    1. Preheat oven to 350º. Cut squash lengthwise and remove seeds from each half. Place facedown on rimmed cookie sheet, sprayed with cooking oil. Bake for 45 minutes. 
    2. In the meantime, heat oil in a large saucepan. Add onion and garlic and sauté until tender. Season with salt and pepper. Stir in tomato, basil and sauté until softened. 
    3. When squash is finished, pull out of the oven and let cool for a few minutes. When cool enough to handle, flip squash over and scrape insides of each half with a fork. Little spaghetti-like strands will easily come off the squash. 
    4. Stir squash with sautéed onion and tomato mix. Add capers and olives. Sprinkle with chopped parsley. Serve and enjoy

    An Italian kind of Christmas


    Sorry for the lack of posting but with the holidays right around the corner I have been running around like a mad woman trying to finish last minute Christmas shopping.

      Instead of waiting until Christmas to exchange gifts with my girl friends I decided to throw a christmas dinner. Normally I would have gone the Asian route but this time I wanted to find a dish that could be served "family style" because my girls are my family. So to the cookbooks I went. Needless to say I have fallen in love Betty Goes Vegan by Annie and Dan Shannon. Its a vegan version of the classic Betty Crocker cookbook, what's not to love!   I don't reprint recipes from cookbooks without permission because that is just a foul to do. So I reached out to Annie, via email, to ask if she would allow me to reprint her recipe, with credit of course. I honestly didn't think she woulI   remember me for Vegfest but she did and she said I can reprint the recipe!!!! I was totes excited!  I decided on the Manicotti with a Kalamata Olive Pesto Tofu. This dish is an undertaking but it was well worth it.

    Manicotti with a Kalamata Olive Pesto Tofu

    1 Package 10-12 Manicotti Tubes (cooked per directions on the package - you want them to be a little firmer than al dente so they don't get mushy when baked and keep them from tearing while you're filling them)

    1/2 Cup Daiya Mozzarella Cheese
    2 Tablespoons Vegan Parmesan Cheese
    Olive Oil Cooking Spray
    Dried Oregano and Red Pepper Flakes to sprinkle over the top
    Sauce
    1 Jar of your Favorite Pasta Sauce
    3 Tomatoes (diced)
    2 Cloves of Garlic (minced)
    2 Tablespoons Braggs
    1/3 Cup Red Wine
    1 Teaspoon Olive Oil
    1 Teaspoon Garlic Powder
    2 Teaspoon Oregano
    1/3 Cup Fresh Basil (diced)
    1/3 Cup Fresh Spinach
    2 Tablespoon Fresh Parsley (diced)
    Salt & Pepper to Taste

    Kalamata Pesto Tofu Filling

    1 Package Extra Firm Tofu (drained)
    1/2 Cup Fresh Spinach
    1/4 Cup Fresh Basil
    15 Kalamata Olives
    5-6 White Mushrooms
    1 1/2 Teaspoon Roasted Pine Nuts
    2 Teaspoon Sun-dried Tomatoes
    2 Cloves Garlic (minced)
    1 Tablespoon Nutritional Yeast
    Heat oven to 350.

    Put all the Sauce ingredients in a large pot and heat at a medium heat. Stir periodically. 

    Put each ingredient in a food processor or blender (one at a time) and blend them till they are a paste. Don't worry about wiping out the machine after each ingredient - you'll be mixing them anyways. Put all the processed ingredients in a large bowl and mix with a large spoon until blended. If you have a pastry bag set or decorating gun, fill that with the Tofu filling and set it up with the largest tip.

    Spray a lasagna dish with Olive Oil Cooking Spray. Take your cooked Manicotti Tubes and fill with the Filling - either with your pastry bag, decorating gun or just use a spoon and be gentle. After you fill each one place it in the lasagna dish. You should end up with just the right amount of Filling to fill the Manicotti Tubes.

    Pour 2 ladles of the Sauce over the top and sprinkle the Daiya and Vegan Parmesan Cheese.

    Bake for 20-25 minutes. You'll know it's done when the Daiya is melted and the Sauce is bubbly. Sprinkle Red Pepper Flake and Dried Oregano and more Sauce if you'd like over the top when you serve.>

    I've never tried to make Manicotti, vegan or not so I had no clue what I was getting into. At one point Keithon came into the kitchen and said are you still cooking. I told him yes now go away. I love that this recipe calls for a lot of fresh herbs and veggies and it used my fav go to of tofu for ricotta! The manicotti shells are what I was most fearful of because I did not want them to tear because if they did then my dinner would be ruined and Cassi would be in tears. Needless to say even with all my careful planning and timing a few shells did break. When life gives you torn manicotti shells you make mini lasagnas. I do not waste food and there were no tears. A few curse words yes but tears no.  With my food processor being broken I was glad that the recipe said that I could use a blender to make the tofu ricotta and I am glad that I did because there was no way I was getting all of the mixture into my baby food processor. Once I stuffed the shells, I set to work on the salad. My plan was to do a simple green salad but I had a shit ton of fresh spinach and pine nuts left so I decided on a Spinach, mushroom and pine nut salad with a blueberry balsamic dressing. Now an Italian dinner wouldn't be dinner without a rich dessert so I whipped up some Diva Delights and an orange vanilla frosting so I could make Whoppie Pies. After dinner we sat around trying to come up with a catchy name for the pies but after a few glasses of wine we failed. My girls RAVED about the Manicotti which totally excited me because Bianca and I are the only vegans in the group. Had I not told them I'm sure they wouldn't have know it was vegan aside from the fact that I don't cook with animal products. My Christmas lunch was a success and no one notice the torn shells. I was a happy camper and I even pulled out the good wine for lunch, by good wine I mean my last bottle of 2 buck Chuck. Mama loves her 2 Buck Chuck but today I shared with my girls.

    I made place cards for the table that were Winnie the Pooh character themed and had each girl try to figure out which one they were. Bianca. This game took forever but in the end Bianca is Pooh Bear, Amy is Tigger, Brenna is Roo, Nicole is Owl, Jennifer is Eeyore and Aisha is Kanga. Now I'm Christopher Robin, I explained to the girls that the reason I did this is because I don't have a best friend and the 6 of them make up the best of me plus no one person can handle all of the crazy that is me. The gifts I gave them were also Winnie the Pooh themed. There is a series of Winnie the Pooh "life" books and each girl's book fit their personality. Bianca got the Fitness one, Amy's was the Picnic cookbook, Brenna got Cookie cookbook, Nicole received Friendship, Aisha got Tea Time and Jennifer got Life Lessons. I also made the girls chocolate from the molds I made a few weeks ago at Five in One as well as some other chocolates. Of course they gave me gifts as well and this year my girls spoiled me rotten. All of their gifts showed that they really know, listen to me and love me. This has been the best Christmas I have had in years and I have my girls to thank for that. I could not have made it through this year without them.

    The Great Cookie Debacle

      At 5 pm Friday night I sent the ladies a Facebook status that said you can start cursing me out now. I did not realize that by Saturday I would be cursing myself out as well. The invite says that we are suppose to bake 13 dozen cookies so I had my game plan in place. I would knock mine out Saturday morning in an hour and a half tops by using 4 cookie sheets and have the rest of Saturday to rest. WRONG!!! Earlier in the week Nicole sent me a text saying that she may not be able to make it because she wouldn't be able to get everything done in time. (she works 2 jobs and has a daughter) Being the Power Ranger that I am I offered to help her, on Friday night. It was no biggie its not like a had a hot date or anything and plus that's what friends do.

      So Friday before heading to Nicole's Keithon, Bianca and I hit up the Crosstown Arts Christmas party. It was a pretty low turn out due to the rain. But just like any Crosstown party it not disappoint. All the food was VEGAN even the items on the decorate your own cookie station were vegan. My son made and ate 5 cookies, he asked if I wanted one. I declined because I knew I would have over a 100 cookies in my possession in the next few hours. After hanging out and doing a little karaoke we headed to Nicole's so we could get to work. Armed with my cookie sheets and apron we set to work...almost. Nicole could not find her measuring cups. She recently moved and just like with any move things were lost in the move. So we headed to Family Dollar where we got her the baking basics, measuring cups, spoons and a cookie sheets with a cooling rack. Now we could get to work. Nicole went the truffle route instead of cookies. There was nothing in the rules that says she couldn't. We rolled 144 truffles. Yes I know that is not 13 dozen but we had a girl drop and I could not replace her. By 11:30pm the truffles were rolled, in the fridge and we were done. Success!!

    8 am Saturday morning I woke up, walked Hollywood and tied my apron back on and set to work on my own cookies. I had Pandora going, I was in my zone. I finished my cookies by 9:30. I am a beast in the kitchen! After cleaning the kitchen and packaging my cookies I crawled back into bed to rest before setting to work on the food and taking Keithon to his Grandma's birthday breakfast. No sooner than I closed my eyes I got a message from one of the cookie members saying she couldn't make it. It was 10:40 am one the day of the party and most girl were done baking. There was no way in blue hell I was going to send a message saying that we would be another girl short. So I had to figure out some way to replace 12 dozen cookies. My first thought was to make cupcakes, no that wouldn't be right. So I went online and Googled "easy vegan cookies" hoping to find one I could knock out using what I had at home. No such luck everything called for one or two things I didn't have. Then I came upon a slide show of 25 christmas vegan cookies as I was going through the slides I stopped on the one of the gingerbread man that was frowning. The story of this cookie is from none other than Annie Shannon from Meet The Shannons. Her story was that she set out to make mini gingerbread men and her plan to to decorate them all cute and what not but they were too small so she was pissed and all she could was decorate with was frowning faces. This was my cookie because it was the day of cookie club and and I had to get back in the kitchen and bake.....again. I was not a happy camper but I refused to let the girls down.

    Now it was my turn to call in a favor from Nicole. She was at my house and we got to work measuring and stirring. My poor hand mixer could not take the strength of gingerbread dough so we had to take turns mixing this dough by hand. A pink Kitchen Aid stand mixer is in my future. With the dough chilling in the freezer and the kitchen re-cleaned, Nicole and I sat on the couch and she told me, "if you start working on these cookies and it doesn't come together walk away. Its not your fault the girl canceled. No stress." After the dough was chilled I started rolling, cutting and baking. Pan after pan went in the oven. I had little gingerbread men everywhere. Once they were cooled I started to decorate them and of course I couldn't find my icing bag or my coupler so I cut a hole in a Ziploc bag and taped the tip on. The bag broke at the seams 6 cookies in! I tossed the bag and started with a new one. I finished 12 cookies and the second bag broke. I was done. I tossed the bag, icing tip and all in the trash and packaged the cookies. No stress remember. I did what I could do.

    I only had the energy to throw together the food spread so I opted for simple things. At the Crosstown Christmas Party they had this yummy Crostini topped with hummus celery and olives. I made the same dish put instead of topping the Crostini with the olives and celery I put them in the hummus and tossed in a few chopped capers for good measure. I paired the left over hummus with carrot sticks as well as chips and salsa. I was spent and the girls would be arriving soon. Lucky for me Bianca brought an awesome crab dish using Match Meat. I forgot how much I missed crab when I had this dish. I need to obtain some Match Meat.

    After getting settled and semi caught up we started on our stories. Since we have the new rule, "What's said in Cookie Club, stays in Cookie Club" I'll only give a brief summary. We have all had a crappy year but we survived it and even found a bit of joy along the way. Unknowing we were all going through a bit of the same struggles. My cookie is the Diva Delight because I am a diva and this year is the year where I am always trying to find the positive in things. All of my cookies were different on purpose. Some were small, some hard, some soft, some were big but there were only 11 in the box but I included a fortune cookie. The reason all my cookies were different is because each month has been different. In the past year I have lost almost 40 pounds, finalized my divorce, became vegan, lost friends, changed my religious beliefs and dealt with death. The lack of a 12 cookie was because I don't know what this month holds for me but I am excited to find out. Here is the recipe.

    Diva Delight

    2 cups all purpose flour

    1 tsp. non-aluminum baking powder

    1/2 tsp. sea salt

    2 tsp. cinnamon

    1 cup sugar

    1/2 cup canola oil

    1 tsp. vanilla

    1/2 cup water

    2 tbsp of Cookie Butter Swirl

    What you do:

    Preheat oven to 350 degrees F.

    Mix everything together in a large bowl, well!

    Using a small/medium scoop, (or a spoon) place on lightly greased cookie sheets. Bake 10-12 minutes. Cookies won't brown on top when they are done.

    All the ladies in the group aren't vegan and I have no problem with that so there were a few non vegan cookies but I was happy that a few non vegans made vegan cookies.

    After all of the baking, wine, drama, tears  and laughs Cookie Club was a success. This year we gave our extra dozen cookies to Hope House. It is a school for children in the Memphis area affected with AIDS and HIV. I love my girls and am so happy we were able to come together again this year. I can't wait til next year mainly because we won't have to bake as many cookies and the club will only have 10 ladies. 10 is a good number for us.

    Veganize This!

      I love when I see non vegan recipes on Facebook, why you ask because it gives me the chance to veganize it and show my Facebook friends that I can eat the same things they do, with a few modifactions of course. A few weeks ago my friend Misti posted a recipe of Spahetti Squash Lasagna Boats on Facebook and my comment was "Now you know I have to veganize this!" Sunday I went to find the recipe on her wall and it was nowhere to be found but never fear she found it and posted it to my wall. A lot of recipes on facebook are Pinterest posts and what not but this recipe comes from Gina Homolka, the creater of the website Skinny Tastes. She takes recipes that she finds and makes them Weight Watcher's friendly. She even has a section of Meatless Monday dishes!!!

      This recipe is pretty easy to veganize. All I had to do was sub the sausage for Tofurky and the cheese with Dayia. When I made the dish I use my trusty Tofu as ricotta mixture but after having it on the dish I decided it was better without it. See also I've never had Spaghetti Squash before because I don't like regular Squash but Spaghetti Squash has won me over. I love it because it is crunchy instead of mushy. I can't wait to try this veggie in different recipes. This dish is a little time consuming so plan ahead before making it or just use the microwave like I did. I never use my microwave to cook things but today I gave it a go because I was pressed for time. I.E. Keithon was hungry. ( We only use the microwave to defrost things. I'm surpised the damn thing still works, its almost 8 years old and cover in rhinestones) I also included a link to the Omni Version just so you can see the orginal and check out her other recipes.

    Spaghetti Squash Sausage Lasagna Boats

    Ingredients:

    2 medium spaghetti squash
    salt and fresh pepper, to taste
    1 tbsp chopped parsley (or basil)
    3/4 cup Dayia mozzarella cheese

    For the sauce:

    1 tsp olive oil
    1/2 onion, finely chopped
    3 cloves garlic, minced
    2 Tofurky Italian sausage (chopped into small pieces)
    14 oz (1/2 can) crushed tomatoes
    salt and fresh pepper, to taste
    2 tbsp chopped basil
    1 Bay leaf

    Directions:

    Preheat oven to 400ºF. Cut spaghetti squash in half lengthwise and scoop out seeds and membrane. Season lightly with salt and black pepper; bake about 1 hour, or longer if needed on a baking sheet, cut side down. 
If you prefer the microwave, cut squash in half lengthwise, scoop out seeds and fibers and place on a microwave safe dish and cover. Microwave 8-9 minutes or until soft.

    In a large deep sauté pan, heat oil and add onions and garlic; sauté on medium-low for about 3 to 4 minutes, until soft. Add the sausage and cook, breaking up into smaller pieces until browned and cooked through. When cooked, add the crushed tomatoes and adjust salt and pepper to taste. Add the bay leaf and cover, reducing heat to low. Simmer 20 to 30 minutes, then add in fresh basil at the very end.

    When spaghetti squash is cooked, let it cool for about 10 minutes keeping the oven on. If you microwaved this, preheat the oven to 400°F.When the spaghetti squash is cool enough to handle, use a fork to remove flesh, which will come out in spaghetti looking strands reserving the shells. Drain the squash on a paper towel to soak up any excess liquid, then toss with half of the sauce. Place the spaghetti squash back into the 4 shells and place on a baking sheet.

    Top each with remaining sauce and 2 tbsp mozzarella cheese. Bake in the oven for 20 - 30 minutes or until everything is hot and the cheese is melted.


      Keithon and I loved this dish. We almost had a Royal Rumble over the last one. Yes, I will fight my 10 year old over the last serving of food. Its how we roll. The brawl was averted we split the last one in half and lives were spared. I paired the boat with Garlicy Kale from Whole Foods deli which is my second favorite version of Kale. I would have made it myself but my food processor is broken and I have yet to replace it. So if you have avoided Spaghetti Squash like I have PLEASE try it. It is so different from normal squash and soooo good.

    Vegan Staple Stew for me and you

    Qubo, a children's cartoon network  on antenna tv, sometimes after the cartoon is over they have a short called Vitaminix and it tells children what foods contain what vitamins. I love it mainly because children need to know these things and they include even include vegan options! Sunday morning while watching Jacob Two-Two (yes I still watch cartoons, on purpose might I add) Vitaminix (check out the shorts in the link) came on and today's vitamin was D. I watched the whole thing waiting for the vegan options and there weren't any! I was a little upset then I started to freak out. I haven't been taking my multivitamin like I should and nor has Keithon so I was starting to freak thinking  that I was depriving my growing child of the nutrients that he needed. So I took to the internet to see how we could get it. Here is what I found out about Vitamin D for vegans.

    "A vegan diet can be planned to provide adequate amounts of vitamin D through use of fortified foods like fortified soymilk. Any person, whether vegan or not, who does not include good sources of vitamin D in his or her diet or take vitamin D supplements can be at risk for not getting adequate vitamin D, especially if sunlight exposure is limited. Some studies have found that vegans have lower vitamin D intakes than do lactoovo vegetarians or meat-eaters. This may be because cow's milk (a source of vitamin D) is a more common part of the daily menu for non-vegans than vitamin D fortified foods are for vegans.

    What Happens If Someone Doesn't Get Enough Vitamin D?

    A vitamin D deficiency leads to nutritional rickets, a condition that causes weak and deformed bones in babies and children. Symptoms can include a delay in learning to walk, low height-for-age, and bowing of the legs and arms. Rickets rarely occurs in the U.S., but a recent outbreak of cases has raised concerns that children are not getting enough vitamin D.

    In adults, not getting enough vitamin D can increase risk of osteoporosis and other diseases"

    So I took to the web to find sources of Vegan Vitamin D because normally it comes from Dairy and we can't have that. I stumbled upon a Raw Vegan Blog and it gave his Top 4 sources. These are his top ways to get Vitman D as a vegan.
    1. The Sun
    2. Mushrooms
    3. Full Spectrum Broad Spectrum or Blue Light Therapy
    4. Supplements

    Now the top way to naturally get in vitiman D is being
    exposed to the sun on your arms for 5-15 minutes a day but in the winter that is hard to do and with it being so cold outside lately, I decided to make what I call a Vegan Staple Stew consisting of all the foods that are "type cast" as vegan foods. I think everyone should include these in there diet vegan or not. Since I may have some omni readers I've included a summary of what these foods are as well at the awesomeness that they include, health wise that is. So much better for you than something that had a mama.

    Quinoa's protein content per 100 calories is higher than brown rice, potatoes, barley and millet, but is less than wild rice and oats. Nutritional evaluations of quinoa indicate that it is a source of complete protein. Furthermore, it is a good source of dietary fiber and phosphorus and is high in magnesium and iron. Quinoa is also a source of calcium, and thus is useful for vegans and those who are lactose intolerant. Quinoa is gluten-free and considered easy to digest.

    Chickpea is a legume of the family Fabaceae, subfamily Faboideae. Its seeds are high in protein. It is one of the earliest cultivated legumes: 7,500-year-old remains have been found in the Middle EastChickpeas are an excellent source of the essential nutrients, iron, folate, phosphorus, protein and dietary fiber (USDA nutrient table). Chickpeas are low in fat and most of this is polyunsaturated. One hundred grams of mature boiled chickpeas contain 164 calories, 2.6 grams of fat (of which only 0.27 grams is saturated), 7.6 grams of dietary fiber and 8.9 grams of protein. Chickpeas also provide several essential nutrients in moderate amounts of 10-19% of the Daily Value

    Kale is a vegetable with green or purple leaves, in which the central leaves do not form a head. It is considered to be closer to wild cabbage than most domesticated forms. Kale is very high in beta carotene, vitamin K, vitamin C, and rich in calcium. Kale is a source of two carotenoids, lutein and zeaxanthin. Kale, as with broccoli and other brassicas, contains sulforaphane (particularly when chopped or minced), a chemical with potent anti-cancer properties. Boiling decreases the level of sulforaphane; however, steaming, microwaving, or stir frying do not result in significant loss. Along with other brassica vegetables, kale is also a source of indole-3-carbinol, a chemical which boosts DNA repair in cells and appears to block the growth of cancer cells.

    Nutritional yeast  or Nooch as we vegans call it, is a deactivated yeast, often a strain of Saccharomyces cerevisiae, which is sold commercially as a food product. It is sold in the form of flakes or as a yellow powder and can be found in the bulk aisle of most natural food stores. It is popular with vegans and vegetarians and may be used as an ingredient in recipes or as a condiment.
    It is a source of protein and vitamins, especially the B-complex vitamins, and is a complete protein. It is also naturally low in fat and sodium and is free of sugar, dairy, and gluten. Sometimes nutritional yeast is fortified with vitamin B12.

    Nutritional yeast has a strong flavor that is described as nutty, cheesy, or creamy, which makes it popular as an ingredient in cheese substitutes. It is often used by vegans in place of cheese.

    Since it was still cold as sin outside, Keithon and I needed something hot, filing and full of Vitamin D to eat after his swim practice. So I whipped up what I call Vegan Staple Stew. I only came up with the name as I was chopping veggies and he asked what I was making. He said ok and walked away.

    Vegan Staple Stew
    Ingredients:
    •7-8 cups of vegetable broth
    •1 cup carrots
    •3 cups mushrooms chopped
    •1 cup squash chopped
    •1 small can of tomato paste
    •1 cup zucchini chopped
    •3 cups chopped mushrooms
    •3/4 cup quinoa, drained and rinsed
    •1 can of chickpeas, drained and rinsed
    •1/2 teaspoon freshly ground black pepper
    •1 teaspoon crushed red pepper
    •2 bay leaves
    •Sea salt, to taste

    Directions: In a large soup pot, add vegetable bouillon and water. Bring to a boil and stir until dissolved. Add in all ingredients and seasonings and stir well. Bring to a boil again and then simmer on low, stirring occasionally. Cook vegetables until tender for approx. 30 minutes. Add sea salt to taste. Serves 6-7.

    Thankfully my vegan freak out was averted because in almost every meal I include mushrooms because of the meaty texture. It is good to know I was unknowingly getting in much needed Vitamin D!

    WARNING: EXTREME JUNK FOOD POST

    Sadly I am an emotional eater, so when I get upset I turn to food that make me happy or bring back good memories and Wednesday I had a super emotional day so I decided to bake! Cupcakes would not do so I turned to Mama Crunk's (Bianca's Mom) Dump Cake from Thanksgiving. Mainly because Thanksgiving was the most recent time I was happy and that cake was awesome.

    I looked up the recipe and it seemed easy enough. You seriously just dump everything in the pan and bake. I used my cupcake pan because cake goes to waste in my house. Its just Keithon and I so we can't eat it fast enough and I end up throwing it out, plus cupcakes are portion control. You know exactly how much you are getting. When I was layering the cherry madness I made a uggh sound and Keithon said "Mom are you doing that because its not fresh fruit?" Pretty much even my child know we don't use canned goods but tonight we were eating BAD!

    Ingredients:
    •1 (20 ounces) can crushed pineapple, undrained
    •1 (21 ounces) can prepared more fruit cherry pie filling
    •1 (18.25 ounces) box yellow cake mix
    •2 sticks (1 cup or 16 Tablespoons) of  vegan butter or margarine, each cut into 12 slices
    •1/4 cup chopped nuts (pecans, walnuts, pistachios, cashews, peanuts, etc., your choice)
    •1/4 cup shredded coconut

    Preparation:

    Preheat oven to 350 degrees F (325 for glass baking dish). Have a 9 by 13-inch baking pan ready or you can use a cupcake pan like I did, make sure you use cupcake liners.

    Dump undrained pineapple baking dish or pan and spread it out evenly. (if using a cupcake pan I put a teaspoon of cake mix on the bottom to prevent the cupcake liners from burning.)

    Using a spoon, dump globs of cherry pie filling evenly on top of the pineapple. (use a tablespoon of cherry and pineapple filing.)

    Sprinkle coconut over top.

    Sprinkle the cake mix evenly over the cherry and pineapple layers.

    Cut butter into slices with a butter knife and place slices evenly over cake mix. (if using the cupcake pan cut each slice in half)

    Sprinkle nuts on top if you're using them.

    Bake for one hour but if you are using a cupcake pan bake for about 30-45 minutes.

    It is the ugliest and unhealthy dish you will ever make but I tell you what it tastes good. As long as you aren't eating Dump Cake every night go ahead and bake one up. After eating two I remembered that I didn't have dinner first. Oh well they are just that good!

    So Many Leftovers

      If you are like me you still have a ton of Thanksgiving leftovers and there are only so many days you can eat the same thing over and over again. Cassi is never one to waste food but what is a girl to do? The answer make pot pies!

      My cookbook collection is growing rather nicely, so I skimmed through them to find a pot pie recipe. After thumbing through about 5 books I said screw it. I have a decent grasp on what flavors go together and what I need to make this happen, so I can do this without a cookbook to guide me. So off to the store to grab a few odds and ends.

      I was itching to use my new cupcake tin and since my household only includes myself, Keithon and our newest family member Hollywood, there was no reason to use a standard pie tin for the pot pie. I also decided against a pie crust because well we remember what happened last time right, so I opted for good old biscuits from the tube. Yes they are filled with all types of extra madness but they are fast, tasty and vegan. (I still read the label just in case)  Now opening biscuits scare the bejesus out of me because of that pop, I always ask others to do it for me or I just don't buy them. This time they opened, on their own, inside my new canvas tote. Great, but hey at least I didn't have to anticipate that dreaded pop.

    I love these because they are small, neat and you don't need a fork to eat them.

    Ingredients

    1 cup carrots
    1 cup celery
    1 cup vegetable broth
    1 cup soy milk
    1 cup cubed potatoes
    1 cup chopped unturkey
    1 tbsp fresh dill
    1tbsp cornstarch
    1 tbsp olive oil
    1 can of biscuits
    Salt and pepper (to taste)
    Crushed red pepper (optional)

    Heat olive oil in sauce pan, then add vegetables and dill. Cook for about 5 minutes stirring constantly. Remove mixture from heat and set aside. Combine cornstarch and broth in a small bowl stir whisk with fork until lumps are gone and set aside. In another pot, heat soy milk (do not let it boil, bad things happen if you do) slowly pour in broth and cornstarch mixture stirring constantly on low heat. Add veggies while slowly stirring mixture, the potatoes will help thicken the sauce. Once you have the thickness you're happy with, add the unturkey, stir to coat and remove from heat. While that is cooling, dust a surface with flour. Open the biscuits, separate and roll out until thin. You want them thin but not too thin. Using a 3 inch circle cutter, cut out as many as you can. ( I was able to get 7 out of the dough) Roll the cut circles just a bit more, just so they fit in the bottom of your muffin tin and around the sides. They don't have to touch the rim. With the remaining dough cut out enough 2 inch circles to place on top. ( if you start to run out of dough gather the scraps into a ball to roll out again.) Using a 1/4 measuring cup slowly pour the pot pie mixture in your dough cups. Do not over fill. Finally place your top on and gently press together. Its ok if a little of the sauce comes out the top. Bake for 9 to 15 minutes or until done. You know your oven better than I do. Once baked and still warm smear a little earth balance on top, just cause.

    You can use whatever leftover veggies you want if carrots and celery aren't your thing. These were just my vegetables of choice. I love kale so I paired mine with an avocado and kale salad. Keithon is normally in charge of making this dish and every time I make it, it always lacks the bit of something. I'm sure it just taste better because my booger bat made it. ( yes I call my child that, that is one of his many nicknames) So don't let those leftovers go to waste, create something new and fun.     Let them eat soup!

    Now before we start, I must say I fully intended NOT to post today but what can I say, here I am.

      There has been a coworker that has been mia at work for a week or so but today she returned, with her mouth wired shut. It wasn't my business so I didn't ask any questions as to what happened. Of course the fat girl in me asked, "What have you been eating?" Her reply "Nothings tastes right so i've been drinking Mt Dew."  I almost lost my shit! No ma'am you will not live on Mt. Dew!

    So I put on my vegan cape and asked her what veggies she liked to figure out what soups I could make her. I LOVE soup! If it were up to me soup would be a food group all its own. Now as for Keithon, that boy loathes soup. He will go to bed with eating if I mention soup is for dinner. Sometimes I wonder if he is really mine.But we settled on a VEGAN Cream of Broccoli Soup. I was so excited because I get to make soup for someone that likes it. Its a very simple recipe that takes about 20 minutes or so. Of course I had to try it and if I do say so myself it is great. I will have to make a batch for myself.

    INGREDIENTS

    2 bunches broccoli

    1 tablespoon olive oil

    1 onion, chopped

    4 cups vegetable stock

    1 russet potato, peeled, cut into 1” pieces

    Spike, ( if you have it) Kosher salt and freshly ground black pepper to taste

    PREPARATION

    Remove and discard tough lower stalk of each broccoli. Peel remaining stalk. Finely chop stalk and florets (you should have about 4 cups). Set aside.

    Heat oil in a medium heavy pot over medium heat. Add onion and sweat until soft and translucent, about 10 minutes. Add stock broccoli, potato and bring to a boil. Reduce heat and simmer until potato is almost tender, about 12 minutes. Remove soup from heat and purée in a blender until smooth. Season to taste with salt, pepper and Spike.

      Now Keithon and I had plain ol  black bean nachos for dinner but nachos aren't nachos without liquid cheese! Cheese was the one thing I missed when I went vegan. I had tried alot of vegan cheeses and of the course the one I am crazy about is from Trader Joe's. Sadly Memphis does not have one so when I get a chance to hit up a TJ's i'm stock up.

    The recipe I discovered is pretty simple and i'm sure it will work with Dayia. I use one cup of soy milk and one cup of cheese. The trick is to keep stirring over low heat. Never let it boil. Add your favorite spices and you are good to go. If your cheese sauces seems a little runny sprinkle in about a teaspoon of corn starch to it. Once you take it off the heat it will start to thicken up.

    Its a Celebration

    No, its not my birthday but it is another important day in my life. Its my VEGANVERSARY! Today I have been a vegan for 8 months and let me tell it has been a journey.

    Now the first question people ask  when they find out I'm vegan is why did I do it? (no I don't announce i'm vegan, I just wait for someone to offer me food) The main reason I became vegan is health reasons. Yes, I love animals and want to protect them all but I have to accept that I can't and take care of my body so I can be the best Cassi I can be. My friends have always known me as a health nut (fast food is the devil to me) but when my eyes were opened when I learned how chicken was for lack of a better term killed. It hit me, I don't want that crap in my body. What you but in your body is what you get out.

    When I decided to take the vegan leap I decided to go all in. I went RAW vegan. I borrowed cookbooks from my friend Bianca, my friends posted recipes on my Facebook wall, it was great. Then a cold snap hit, I missed soup and I wanted hot food. So no more raw vegan, normal vegan would have to do and I have barely looked back.

    Now to celebrate my big day I made two favorite dishes. Chow mei fun, spring rolls and a glass of Charles Shaw "2 Buck Chuck". Who knew 2 Buck Chuck would be vegan?! I picked it up months ago on my first magical trip to Trader Joe's because it was cheap and if it tasted like crap, hey I only wasted 3 bucks. Let me tell you this wine is awesome! Best 3 bucks i've ever spent. Ok now back to the food.

    Chow mei fun has always been my favorite because of the thin rice noodles. I always order it spicy, if its not spicy its not right but making it at home is fast and easy! Soak the noodles in warm water for about 10 minutes drain and place on a towel so you get all the water out. While that is happening saute your favorite veggies and then combine. Simple, yummy and ready in about 10 minutes.

    Now my beloved spring rolls take a bit more work but once you get the hang of it you will be able to do it in your sleep. Spring Rolls are my favorite because they are not fried, I've never really cared for fried foods. (I'm sure a piece of Bianca's soul just died because I said that. That girl loves her fried food.) Spring rolls are fun because you can add whatever makes you happy. I love bean sprouts in mine,  my son loves tofu sticks in his so I put tofu in his and load up on the bean sprouts for mine.

    Here is a recipe, trust me its not as hard as it seems. You can find the rice paper wrapper and noodles at Asian markets. If you can't find the items you need in the market just tell them you want to make spring rolls and they will be happy to help you. I use a mixture of soy sauce and chili garlic sauce to dip mine in. Keithon likes a little Sriracha with his. That's my boy!

    Ingredients:

    Cellophane noodles (Bean thread noodles) 1 tablespoon seasoned rice vinegar Red or Boston lettuce leaves (leaves separated, rinsed, dried, and tough ribs discarded Fresh mint leaves, washed, dried, and coarsely chopped Fresh basil leaves, washed, dried, and coarsely chopped Fresh cilantro leaves, washed, dried, and coarsely chopped Coarsely shredded carrots Spring Roll Wrappers (rice paper rounds), 8 1/2-inches in diameter**

    Preparation:

    Cover bean thread noodles with hot water and let soak 15 minutes; drain well in a sieve or colander. Pat dry between paper towels and toss with rice vinegar. Cover and refrigerate until ready to use.

    (1) Spring Roll Wrapper or Rice Paper Wrappers come out of the package hard and inedible, and they must be soaked in water before using.

    Fill a pie plate or bowl with lukewarm water. Immerse rice paper in warm water for 10 seconds to soften them up just until soft but still flexible (work with one rice paper at a time, being gentle as they break easily when brittle). Remove from water and place rice paper on a kitchen towel and let rest approximately 30 seconds until it's more pliable.

    (2) Arrange one piece of lettuce on bottom half of soaked rice paper, folding or tearing to fit and leaving a 1-inch border along edge. Top with some of the seafood, noodles, mint, basil, cilantro, and carrot (don't overfill). Make sure the ingredients are not clumped together in the center, but evenly distributed from one end to the other. Note: The fillings may be placed on the rice paper in any order your desire.

    (3) Pressing down on the filling with your fingers (pressing down on the ingredients is particularly important because it tightens the roll), fold the bottom end of the sheet (side nearest you) over the top of the fillings and roll into a cylindrical shape halfway.

    (4) Fold the left and right sides inward and complete rolling the remaining half (If rice paper is too dry to seal, moisten unsealed edges with a little more hot water). Transfer summer roll to a plate, seam-side down, and cover with dampened paper towels. Make additional roll in the same manner.

    Now a celebration wouldn't be a celebration without a CUPCAKE and Mama loves her cupcakes!  Bianca surprised me last night with this yummy treat from an up and coming vegan baker. Now go whip up some spring rolls, you'll thank me later.
